Bärbel
Ingredients
Batter
400g all-purpose flour
100g butter, room temperature
250g sugar
4 eggs
1/8 liter cream
1 pack vanilla Sugar
1/2 pack baking powder
Streusel
300g flour
190g sugar
190g butter
1 pack vanilla sugar
Cinnamon sugar: 1 tbs of sugar + 1tbs of ground cinnamon
Sour apples or seasonal fruits of choice (cherries, plums, etc)
Preheat the oven at 180°C
Butter a rectangular baking tray.
Fruit Preparation
Peel and cut the apples (and/or other fruit) into 1 to 2-inch small cubes.
Batter Preparation:
Cream the butter with the eggs.
Mix in the sugar and vanilla sugar.
Add the liquid cream, then the baking powder.
Add ¼ of the flour, mix, add the rest, mix again.
Set aside.
Streusel Preparation
Melt the butter.
Combine the flour and sugar in a big bowl.
Add in the melted butter. Mix together until it looks like breadcrumbs.
Assembly
Pour the batter onto a baking tray with baking paper, make sure it is spread well equally.
Take a fork and poke little holes into the batter.
Add the apples (and/or other fruits).
Sprinkle the cinnamon-sugar above.
Sprinkle the streusel above the fruit.
Bake in the oven for about 30-45 minutes until the crumble is browned.
